This is the difference between the Ultimate product & it's competitors The Ultimate Potato produces the only oil blanched fresh French fry on the market. Other Manufacturers "claim" to have an Oil Blanching Process, but they actually Blanch them in Water (Boil) them, and afterwards spray them with Oil, to give them a slight shell and the visual effect of Oil Blanching. This saves them over C$1.25 a case. However, you can tell by the slightly mushy taste that they were Blanched with Water. Not as bad as frozen fries but not the "Real Thing". This is a costly process for us but, is more cost effective for the restaurateur, & adds more flavor to the fries. Blanching is essentially a 1st stage cooking process &, when Potatoes are blanched in water it leaves water inside. At the restaurant this is fried out (in vegetable oil) which displaces the water with the restaurants oil. The savings on oil to the restaurateur is obvious as there is approximately C$1.25 of Oil in every Case which does not get displaced in the Restaurants Fryer. This is like giving a Liter Jug of Oil with every Case. The other Manufacturers are giving you a Liter Jug of Water which goes straight into your Fryers. Everybody knows that Oil & Water do not mix, and, the Water is forced out of the Fries & steamed out of the Fryer. Every batch of Fries takes Oil out of the Fryer. With Ultimate Fries, we bring our own Oil and keep your Oil replenished. With Water Blanching the damage to the fryers oil, as the water is fried out of the potato is clear, as therefore, is the cost of the Oil. The presence of Water in either Frozen Fries or a Water Blanched product will also help break down the Fryer's Oil which will lead to more frequent changes, This is a real expense for restaurateurs. Much of any potato, originally as it grows, consists of water & by purchasing any other brand than Ultimate you are still buying a lot of water which is displaced in the cooking process. In addition, these are fresh, yes fresh, fries - not frozen. Frozen fries contain a lot of water which is why they taste mushy. As they say, "once you get fresh you'll never go back"- so get fresh with us! Finally, on the subject of Frozen Think about this. When you dump a basket of Frozen Fries into a fryer, running at 350 degrees Fahrenheit what do think happens to the temperature? It goes down Naturally. What does this do for your Natural Gas bill? Of course you can buy un-blanched fresh cut fries at your wholesaler but shelf life is minimal due to their nature. Finally, you can make you own. all you have to do is: 1. Peel the potato. and you can get very good French fries. However, you have labor costs, labor difficulties & depending on the time of year potato inconsistencies.
